Banana Cupcakes with Cream Cheese Frosting

Makes 12-14 cupcakes

Ingredients
125g butter, softened
3/4 cup castor sugar
1 tsp vanilla extract
2 eggs
3 medium bananas, mashed
1 1/2 cup self-raising flour
1/2 tsp bicarbonate soda
1/3 cup milk

Cream Cheese frosting
100g cream cheese
1 1/2 cups icing sugar, sifted
1 tsp vanilla extract

Method
1. Preheat oven to 180°C and line 12 muffin pans with patty case.

2. Using an electric mixer, beat butter, sugar and vanilla until light and fluffy. Beat in eggs one at a time. Stir in mashed banana.

3. Sift in flour and bicarbonate soda over banana mixture. Add milk. Using a metal spoon, gently fold in flour into the batter. Don’t over mix.

4. Spoon evenly into prepared muffins pans, filling to approx ¾ full.

5. Bake for 18-20 minutes until cooked through when tested with a skewer. Cool in pans for 5 minutes then cool on wire racks.

To make cream cheese frosting: Using an electric mixer, beat cream cheese, icing sugar and vanilla extract until smooth. If it's a little too thick, you can add some apple or orange juice. Spread frosting onto cooled cupcakes.
